Oatmeal Energy Bites


This morning I made another batch of our Oatmeal Energy Bites.  Our recipe is a variation of  Gimme Some Oven’s No Bake Energy Bites and a recipe shared by one of my daughter’s dance teachers:

  • 1 cup quick cook oats
  • 1/2 cup chocolate chips
  • 1 oz milled flaxseed
  • 1/3 to 1/2 cup peanut butter (I start with 1/3 and add more if needed)
  • 4 tbs honey
  • 1 tsp vanilla

Mix all ingredients in a medium bowl.  Chill for half an hour.  Roll into balls.  Store in a covered container and keep refrigerated for no more than one week.  (Our recipe makes about 15 and are usually gone in a few days).
